Add the vinegar, soy sauce, honey, sugar, hoisin sauce, garlic chili sauce, fish sauce and all but 1 tablespoon of the water into the inner pot.
Turn the sear/saute on high and bring to a boil. Stir occasionally until the sauce starts to thicken, which takes about 5 minutes.
Mix the cornstarch with the remaining Tablespoon of water. Add the cornstarch slurry to the sauce and continue on high, stirring constantly until thick, which takes about 2-3 minutes.
Turn the Ninja Foodi off and remove from the pot. Place in a covered container until the cauliflower is ready to be tossed. Rinse the inner pot.
Air Fried Cauliflower
Combine the ½ cup of panko and ½ cup of flour in a shallow container for breading.
Lightly whisk the egg and chili garlic sauce together. Add to a shallow container, add cold water. Sift in the remaining ¾ cup of flour and gently mix to combine. Don't beat with a fork, just swirl the ingredients around to combine so you don't develop gluten which will result in a tough crust on the cauliflower.
Preheat on broil with the basket in the Ninja Foodi for 10 minutes.
Cut the cauliflower florets about the size of half dollar.
Dip the florets into the wet batter to coat and then coat with the dry mix and set on a cooling rack until they are all breaded and the Ninja Foodi is preheated.
Spritz the basket with oil. Lay the coated cauliflower in a single layer in the basket of the Ninja Foodi and spritz well with oil. You want use enough oil so you don't see the flour. You might have to air fry in batches. Air Crisp on 360°F/180°C for 18 minutes, flipping halfway through.
You can reheat the sauce if you want. Toss the air fried cauliflower in the General Tso's sauce, add the toasted sesame seeds if using, toss again and serve immediately.
