Combine the sugar, vodka, corn syrup, and water in the cup of a high speed blender. If you only have a pitcher for your blender, you will want to double all of the ingredients.
1 cup granulated sugar, 6 ounces vodka, 3 Tablespoons light corn syrup, 2 Tablespoons water
Cut the vanilla beans into pieces that are about 2-3" in length and add to the blender cup.
2 ounces whole vanilla bean
Blend on the highest speed for about 2-3 minutes or until the mixture is smooth. I use the extract function on the Ninja Foodi Blender.
Pour into storage containers with a lid and store at room temperature for up to 1 year.
Yield: This recipe makes about 14 ounces of vanilla bean paste as written.Don't forget to double it if you are using a blender pitcher instead of a blender cup.Your vanilla bean paste will be thin when you first make it. Let it sit for one to two days and it will thicken up. You can use your paste right after it is made, but I recommend only using it in items that will be cooked because the alcohol taste will be pretty strong for about 2 weeks. After two weeks, the intense vanilla flavor is present and you can use it in uncooked things like whipped cream and yogurt.
