Bite Size Cheese Puffs

Ingredients

Cup
of Water
½
Cup
of Butter
salted
½
Teaspoon
Salt
1
Cup
of Flour
4
eggs
room temperature
½
Cup
Parmesan
grated
Instructions
Preheat oven to 400 degrees Fahrenheit.
In a 3 quart metal saucepan heat water, salt and butter until boiling
Add in flour while stirring vigorously until mixture separates from from side of pot and becomes a ball of soft dough
Remove from heat. Using an electric mixer beat in one egg at a time until you have smooth, soft dough.
Stir in Parmesan cheese
Drop rounded teaspoons onto greased cookie sheet, place cookie sheet in oven
Reduce oven temperature to 375 degrees Fahrenheit and cook for 20-25 minutes or until puffs are golden brown.
Remove from cookie sheet and allow to cool on cooling racks
Spit in half and fill with your favorite filling.
Serve & Enjoy!
Notes
To freeze cheese puffs, place on cookie tray and put in freezer. Once frozen, place in freezer bag and store in freezer until ready to use.
