Cut the jalapeno pepper in half and remove the seeds if desired. Cut the onion in half and remove the outer skin. Remove the outer paper from the garlic cloves. Peel and slice the carrots in ¼" slices. Dice the chicken into ½" dice. Drain the canned beans. Drain the corn if using canned.
Add the jalapeno pepper, onion, garlic cloves, and cilantro to the Ninja Foodi Hot Cold Blender and pulse 2-3 times. Add the chicken stock and pulse 2-3 more times.
Add chicken, seasoning mix, fire roasted tomatoes, carrots, beans, and corn.
Select the hearty soup function on the blender. If the carrots aren't submerged in the liquid, use the tamper to press them down into the liquid so they cook evenly.
When the cycle is done, remove the lid. Ladle soup into bowls.
