Rinse the Jasmine Rice under cold water for 2-3 minutes. Combine 1 Cup of rice with 1 Cup of water and 1 tablespoon of Sesame Oil in the inner pot of the Ninja Foodi.
Put the pressure lid on and set the pressure on high for 1 minute. Set the black valve to seal. Immediately release the pressure. Remove the pressure lid.
While the rice is cooking, dice up your ingredients.
Add in all the remaining ingredients, except the eggs and green onions. Stir. Put the TenderCrisp lid down and set the Air Crisp function on 390° F for 10 minutes. Stir every 2-3 minutes.
Push the rice to the edges, making a well in the center. Scramble 2 eggs. Turn on the sear/saute on high. Add the eggs to the center and leave them alone until they begin to set on the bottom.
Once the eggs begin to set, use a chopstick or other utensil that is safe for non-stick and move them around continuously while they finish cooking. This will keep them fluffy. When they are almost completely cooked, turned off the Ninja Foodi
Add in the diced green onions. Stir to combine. Serve & Enjoy!
