This was awesome spaghetti. I normally only eat my own spaghetti and we won't ever eat spaghetti in restaurants since we only like mine. But The Salted Pepper's spaghetti is amazing!!! I still can't believe it!

For those who have a wheat or gluten intolerance, I tried this with red lentil spaghetti. I've made it with regular whole grain pasta before but I wanted to try with something different. The only adjustment I'd make is maybe making it four minutes instead of three. Three was perfect for the wheat spaghetti but I've noticed when cooking with the basic stove-top method, red lentil spaghetti needs some more cook time. The same applies to brown rice pasta as far as cook time. I do need to try it again with a longer cook time, as it may even need five minutes, but that's just my preference.

I like red lentil spaghetti because it has more protein than brown rice or whole wheat spaghetti, though less fiber than whole wheat spaghetti. Red lentil spaghetti is also really sticky as soon as moisture touches it so spreading out the noodles a little more before cooking may be needed. There were a few noodles that stuck together and had to break them apart when stirring. Brown rice pasta seems to be as sticky as wheat pasta.

The Gluten Free - Corn and Quinoa blend mix spaghetti noodles turn out perfect. My Wheat eating dinner companions couldn't tell the difference. I think they held up the best too for leftovers. I had that problem with the Lentil as well.
      This such a GREAT RECIPE!

I've been married almost 20 years. I cook almost daily. We have had spaghetti with meat sauce who knows how many times over the years. My husband just told me this was the best sauce I've ever made! Thank you for the recipe and the video walk thru!

It was delicious, however I made it with vegan meatballs and those did not turn out great mixed in there instead of meat.
Can I make this without meat? Would I need to change anything as far as temp or time?

    • Louise says

Certainly, just omit the meat and no other changes are needed.

I've tried a similar recipe and love the convenience of it however my family wasn't fond of the texture, I think it was due to not enough liquid which made it somewhat sticky/starchy. Im going to try again with your recipe, I'm curious though if this can be made without meat and if anything would have to be changed or layered differently?

    • Louise says

Yes, you can omit the meat. No other changes needed.
