Let’s take the Fuss out of making fudge with this simple recipe that pretty much makes itself right in the Ninja Foodi! I really love making sweet treats, but sometimes it can be a real pain getting the temperature exactly right.
Not with this recipe! In fact, you don’t even need a thermometer. This truly is No-Fuss Rocky Road Fudge!

What makes this kind of recipe so exciting is you can turn it into any type of chocolate fudge you like just by adding different mix-ins! Yep, it is that simple.
How to use the Steam Function on the Ninja Foodi
I am amazed at how many different uses there are for the steam function on the Ninja Foodi and since we will be using it in this recipe for rocky road fudge, I thought I’d go over using the steam function on the Ninja Foodi.
First, and most important when using the steam function on the Ninja Foodi, you want to make sure you have enough liquid that will last the entire time you are steaming. My rule of thumb is 2 cups of water or any thin liquid. This will do the trick for most foods that you are steaming, however if you plan on steaming something longer than 30 minutes, you might want to increase that liquid amount to 3 cups.
The other important step to successful steaming in the Ninja Foodi is to make sure the black valve is set to the vent position. You want the steam to escape and will notice that once the liquid starts boiling and steam is created it will be released through the vent. Sometimes the force of the steam creates a steady release and sometimes you will barely notice it coming out. Do not be concerned by this. As long as the black valve is all the way over to the vent setting (it lifts up and clicks when positioned correctly), you are steaming.
If you forget to vent the valve during steaming, your pot will go under pressure and you will see the red button pop up and stay up. It is normal from time time, especially when you first start seeing steam come out for the red button to pop up for a minute or so. It should go back down though. If it doesn’t depress, check the valve, you may not be vented all the way.
When to Use the Steam Function on the Ninja Foodi
Many people are unsure of when to use the steam function on the Ninja Foodi, so I thought I would share some of my favorite uses for it!
Making Rocky Road Fudge, of course! In just 5 minutes of steaming we end up with perfectly melted chocolates for our fudge. It’s so simple, I’m still amazed by this recipe! When steaming anything with chocolate, you do want to make sure the container is sealed tightly. We want the heat of the steam to heat our fudge ingredients, but we don’t want any moisture to get into the fudge. I’ll go over that a bit more in the Tips section of this post.
Reheating leftovers! The steam function of the Ninja Foodi is going to be your best friend when heating many of your left overs! I even steamed a burrito and then AC it and it tasted just as delicious as the day I made it; and here is how I did it:
Reheating Burritos using the Steam Function: Put your burrito in a covered pan. Put 2 cups of water in the Ninja Foodi. Put the pan on the rack and put the pressure lid on. Set the steam to 10 minutes and make sure the valve is vented. You will have a perfectly heated-through burrito, and if you want it crispy, just AC it and it will crisp up perfectly!
Reheating Pasta: This is perhaps my favorite way to reheat any pasta dishes because it gently heats the dish all the way through, but does not overcook the noodles. You can even do this from frozen! Place pasta in a covered pan and steam for 10-15 minutes or until heated through. If frozen, increase time to 20-25 minutes. Perfection! I use this method to reheat frozen lasagna all the time. Reheating meat: Steaming is one of the best ways to reheat meat without drying it out. I used this method for reheating my Asian Pulled Pork, Meatloaf, and so many other types of meats. Place the meat in a covered dish and steam for 10-20 minutes or until heated through.
Steaming foods! This might seem obvious, but maybe not. Of course, steaming is a great function to use for veggies, but did you know you can also steam bread? Check out these little steamed buns I made in the Ninja Foodi… they are so delicious and you can stuff them with anything you’d like.
So now that you know how much I LOVE the steam function on the Ninja Foodi… let’s get to steaming some Rocky Road Fudge! I’ll bet that is a new one… steaming fudge.
Tips for making Rocky Road Fudge
Get your mix-ins ready while the chocolate and sweetened condensed milk are steaming in the Ninja Foodi. Once you remove the pan from the Ninja Foodi, you will want to stir in the mix-ins quickly so the fudge doesn’t have a chance to cool before they are incorporated.
Make sure your pan is completely covered. The easiest way to do this is with foil. I used a double layer of foil to really make sure no water got into the mixture. Water and chocolate don’t get along that well and if moisture/water is allowed to get into the fudge, it may seize up and become brittle and difficult to work with.
Make sure your valve is to the vent position. You do not want to go under pressure or the chocolate may become too hot and this can also cause it to seize up.
Have Fun! This is one of those recipes that you can customize and really have fun with. Be creative and use the mixi-ns you love! I would keep the total amount of mix-ins to about 1 ½ cups or so, but the sky is the limit!
How to Make Rocky Road Fudge in the Ninja Foodi

The first thing you want to do is choose your pan. There are a couple of options here: you can pick a pan that fits into the Ninja Foodi and can also be used as the container your fudge sets up in; or you can cook the fudge in one container and after the mi-xins are incorporated, pour it into a parchment-lined square or rectangular pan. Keep in mind, the bigger the pan, the less height your fudge will have.
I wanted to keep this one super simple and used this 6″ square Fat Daddio pan for both the cooking and the storing of my rocky road fudge. If you don’t have a square pan that will fit in the Ninja Foodi, go ahead and use a round one. So, all the edges won’t be square… it’s gonna taste the same!
The second thing I recommend is choosing your mix-ins. If you want to use nuts, I recommend roasting them (if they aren’t already roasted) in the Ninja Foodi before adding them to the fudge. This really brings the flavor out in the nuts and it’s so easy to do! Simply preheat the Ninja Foodi on broil for 10 minutes, dump the nuts into the basket and broil for 3-5 minutes until toasted. Remove and allow to cool.
It’s as easy as 1-2-3!
- Line your pan with parchment paper. This will help with removal after it cools. Add in the chocolate chips and the sweetened condensed milk. Cover the pan with foil. Pour 2 cups of water into the inner pot of the Ninja Foodi
- Place the pan on the rack in the low position and set the steam function for 5 minutes. Remove the pan from the Ninja Foodi when done. Remove the foil and be careful not to get any water into the fudge. Don’t worry that the chocolate chips don’t look melted, they are.
- Stir in the vanilla, salt, and the mixins. The Fudge will start to thicken as you stir. Allow to set up in the fridge for 2-4 hours. Pull the parchment paper out with the block of fudge. Cut and Serve!
No-Fuss Rocky Road Fudge in the Ninja Foodi
- Ninja Foodi
- Preheat the Ninja Foodi on Broil for 10 minutes with the basket in. Dump the Almonds into the basket and broil for 3-5 minutes until lightly roasted. Remove and allow to cool.
- Line the square pan with parchment paper. Pour in chocolate chips and sweetened condensed milk. Cover well with foil or another covering that will keep the moisture out. Place the pan on the rack in the low position.
- Pour in 2 cups of water. Place the rack into the Ninja Foodi and set the steam function for 5 minutes. Make sure the valve is to the vent position.
- While the chocolate mixture is steaming, get your mixins ready. Crush up the Almonds and cut the marshmallows into small pieces if using the large ones.
- Remove the pan from the Ninja Foodi and carefully remove the covering so that water does not drip into the chocolate.
- Add in the vanilla, salt, cut up marshmallows and chopped almonds. Stir to combine. Get into the corners so the chocolate mixes with the sweetened condensed milk. The fudge will start to thicken as you stir and it cools.
- Allow to cool in the fridge for 2-4 hours. Remove the fudge with the parchment and cut into 1" squares. Serve & Enjoy!
