Thaw, rinse, and drain the shrimp. Keep refrigerated until use. Make the Mango Sauce (this can be done 2-3 days ahead of time)Make the Cilantro Lime Slaw (you can make this up to two hours ahead of time)
12 ounces large shrimp (raw)
In a small to medium size bowl combine the flour, egg, and seasonings. Mix together with a fork and check for consistency. The wet batter should be the consistency of thin pancake batter. If it is too thick, add 1 teaspoon of water at a time until it becomes the correct consistency.
2 Tablespoons all purpose flour, 1 Large egg, ¼ teaspoon kosher or fine grind sea salt, ¼ teaspoon onion powder, ¼ teaspoon garlic powder, ¼ teaspoon ground cumin, ¼ teaspoon smoked paprika, ⅕ teaspoon cayenne pepper, ½-1 Tablespoon Cold Water to thin batter if needed
In a shallow container, combine the bread crumbs and seasonings. Mix well.
½ cup plain bread crumbs, ¼ teaspoon kosher or fine grind sea salt, ¼ teaspoon onion powder, ¼ teaspoon garlic powder, ½ teaspoon ground cumin, ½ teaspoon smoked paprika, ⅕ teaspoon cayenne pepper
Dip each shrimp into the wet batter and shake off any excess. Place the coated shrimp into the dry breading and coat all over. Make sure to get into the natural curve of the shrimp. Place the breaded shrimp on a rack and repeat for the remaining shrimp.
Preheat your air fryer on 400℉/200℃ with the air frying basket or tray inside the appliance for a full 10 minutes. I usually start this while I'm breading the shrimp.
Spritz the breaded shrimp with neutral oil, such as avocado or vegetable oil, on both sides. Place the shrimp in a single layer in your air fryer basket or tray. Air Fry on 400℉/200℃ for about 4 minutes, then flip the shrimp. Spritz any dry spots you see on the breading. Continue air frying for another 4-6 minutes or until the breading is nicely browned. You can take an internal temperature of the shrimp if you are unsure if they are cooked, but I have found that 8 minutes of air frying cooks them perfectly. Shrimp are done when the internal temperature is 145℉/63℃. Depending on the size of your air fryer, you may need to cook the shrimp in batches.

Once fully cooked, remove the shrimp and place them on a cooling rack. This will keep them crunchy while you assemble the tacos.
Place 3-4 shrimp into the warm tortilla and top with slaw and mango sauce. Add any additional toppings that you like. Serve & Enjoy!

To prepare the shrimp ahead in advance, follow these instructions
Despite some myths that circulate around the internet, it is perfectly safe to thaw seafood, bread it, and then freeze it AS LONG AS you have thawed it correctly (thawing the refrigerator is best practice).Once all the shrimp have been breaded, spritz them with oil on both sides (this helps prevent ice crystals) and place them on a parchment-lined tray. Freeze overnight. Transfer the frozen shrimp to a freezer bag or other airtight container and keep them in the freezer until you want to air fry them. Air Fry from frozen, do not thaw after they are breaded or they will become soggy.
