    I love chicken corn chowder! It's probably one of my favorite comfort soups of all time, but I hardly ever make it because it's loaded with calories. Not any more!

    Can I use raw chicken instead of cooked chicken?


    You can, but it's easier and faster to use chicken that is already cooked. Since you want the base to be smooth and creamy, but also want chunks of chicken or shredded chicken in the soup, you can't just add the chicken at the beginning and select smooth soup or you would have pureed chicken.
    I did test this soup with raw chicken and it took too long, so I suggest cooking the chicken first or using leftover cooked chicken from a rotisserie chicken.

    Does this soup freeze well?


    I haven't tried it, but you might find that it thins out some after freezing and thawing due to the cauliflower in the soup.

    Can I make this Vegetarian?


    Yes. Switch out the chicken stock for vegetable stock and omit the bacon. Since the bacon does add a ton of flavor, you might want to add a drop of liquid smoke or add in some other seasonings.

    What to serve with the Chicken Corn Chowder?

    This chowder is so filling that Jeff and I have had it for dinner all by itself!

    It's also great with a side salad and homemade bread!

    When my Mom used to have parties at her house, she often made several kinds of soups and breads and served them buffet style and they were always a big hit!

    It's a great way to make everything ahead of time and put the various soups out in crock pots or even your pressure cooker on the warm setting. Everyone would choose the soups they wanted to try and it was always such a simple cleanup afterwards!

    Some other soups that can easily be made with your pressure cooker, slow cooker, or Cold & Hot Blender.

    What Toppings Can I Put on My Chowder?

    My favorite added toppings are diced red peppers, green onions and a dash of chipotle pepper!

    Not only does this add a beautiful color to the soup, that little bit of spice is so good!

    Crispy crumbled bacon would also be delicious!

    Do I have to have the Ninja Foodi Cold & Hot Blender to make this recipe?

    Not at all, but it does make it easy! I'm not kidding either. The (affiliate link)Ninja Foodi Cold & Hot Blender is simply amazing!

    It chops and cooks everything on autopilot!

    If you don't have the blender, no worries. You can make this in your electric pressure cooker or on the stove and I'll give the instructions below.

    How to make Healthy Chicken Corn Chowder in an electric pressure cooker

    Add the chicken stock to the inner pot. Add the cut up bacon, onion, roasted garlic, cauliflower florets, salt, pepper, liquid from canned corn and ¼ cup of corn kernels.

    Put the pressure lid on and PC for 3 minutes. Immediately release the pressure and use an immersion blender or regular blender to puree the mixture.

    Heat on sear/sauté over low to medium heat. Add cooked chicken, cream, and remaining corn. Be careful not to boil the chowder, but simmer on low until warmed through.

    Serve & Enjoy!

    How to make this Chicken Corn Chowder on the stove

    Add the chicken stock to the inner pot. Add the cut up bacon, onion, garlic, cauliflower florets, salt, pepper, liquid from canned corn and ¼ cup of corn kernels.

    Heat on medium until the cauliflower florets are soft and the bacon is cooked through. This will take about 20 minutes.

    Use an immersion blender or other blender to puree the mixture. Add the cream, chicken, and remaining corn. Stir to combine and heat on low until heated through.

    Serve & Enjoy!

    How to make Chicken Corn Chowder in the Ninja Foodi Cold & Hot Blender

    One of the best things about using the Ninja Foodi Cold & Hot Blender to make soups is you don't have much prep to do at all!

    Simple cut an onion (I used a sweet onion) into quarters. You will only use one quarter in this recipe.

    Cut the bacon into thirds and cut the cauliflower into quarter size florets. Cube or shred the cooked chicken.

    Here is the size that I cut my cauliflower and it worked fine in the blender.

    That's it. Prep done!

    Add the chicken stock, the bacon, the onion, ¼ cup of the corn with the juice from the can. If you aren't using canned corn, then add 1¾ cups of chicken stock since you won't have the juice from the can.

    Add the cauliflower florets, roasted garlic, salt and pepper. You really don't want to skip the roasted garlic in this recipe. It's super easy to make and is unbelievably good. Here is the recipe: Roasted Garlic in the Ninja Foodi

    If you decide to use minced garlic, only use 1-2 cloves at the most.

    Put the lid on the blender and select smooth soup. You can either wait until the cycle is done or add the cream with 90 seconds left on the cycle. If you add the cream after the cycle is done, simply pulse to blend it.

    Once the soup base is done, add cooked chicken and remaining corn. Heat on medium for a few minutes.

    Ingredients

    • 1 cup chicken stock
    • 15 oz corn with liquid, divided in recipe
    • 2 slices thick-cut bacon
    • ¼ onion
    • 1 bulb roasted garlic
    • 16 ounces cauliflower
    • 1 teaspoon salt
    • ½ teaspoon pepper
    • ½ cup heavy cream
    • 8 ounces cooked chicken

    Instructions
     

    • Add 1 cup chicken broth, liquid from the canned corn, and ¼ cup of corn kernels to the blender.
    • Cut the raw bacon strips into thirds and add to the blender. Add ¼ of an onion, 16 ounces of cauliflower florets, bulb of roasted garlic (paper removed), salt and pepper to the blender. Put the lid on and select smooth soup.
    • When the smooth soup function finishes, add the cream and pulse to combine. Add the cubed chicken and the remaining corn. Heat on low for a few minutes.
    • Serve & Enjoy!

      Sorry, I haven’t made it yet but I wanted to know if skipping the bacon would make a big difference? I know the flavor would be slightly different but I’d rather not:(

        The only difference will be in the flavor, you'll lose the smoky flavor. You might need a touch more salt, but otherwise it should be fine.

        Do you think this will work with coconut milk instead of heavy cream? My husband is allergic to dairy (and soy. and...). I just bought the Foodi Hot & Cold blender and I can't wait to try it!

          It's going to taste different of course, but it should work just fine. I'd probably add a little sugar and curry powder and make it a curry corn chowder.
