    Frittata in the Ninja Foodi

    Using the Ninja Foodi to make a Frittata is quick & easy! The best part is you can add any ingredients you want and it's a great way to use up leftovers!

    Leftover veggies, leftover meats, even leftover stuffing! In fact, that's what I used in my version of a Ninja Foodi Frittata... stuffing!

    The funniest thing about this recipe is, I didn't come up with it! Jeff, my husband, did. I was working in my office and he comes back with this plate and said, "I made breakfast."

    My husband doesn't cook that much, but he does make breakfast that usually consists of bacon and eggs. I literally have no idea where he got the idea to use some leftover cornbread and sausage stuffing to make a frittata, but it was flipping delicious!

    I promptly asked him how to make it and we filmed the recipe the next day! This one is so easy it doesn't have to be tested a gazillion times!

    No worries if you don't have any leftover stuffing, you can make this so many different ways and use whatever ingredients you have on hand!

    Frequently Asked Questions

    Can I double this recipe?


    Yes, you can. However, your depth is going to increase and therefore it will take longer for the egg mixture to set. If you wanted to double it, I would definitely reduce the heat to low and leave it on sear/sauté until you see the edges start to set.

    It is very important that you allow enough time for the heat coming from the bottom of the pot to cook the eggs enough or you may end up with a cooked bottom, a cooked top, and raw eggs in the center.

    The time this takes will depend on your ingredients, so just watch those edges and when the eggs are about 75% cooked, you can lower the crisping lid.

    Can I Freeze Leftovers & Reheat?


    I haven't frozen leftovers, but I don't see why you can't. Just make sure the frittata is cold before freezing to avoid steam that produces ice crystals.

    Reheating is very easy and I like to use steam in the Ninja Foodi. Simply place your thawed or frozen piece of frittata into a pan with a cover (foil is fine) and put two cups of water into the inner pot. Place the pan on the rack in the low position and steam (vent open) for 10 minutes if it's thawed and 20 minutes if it's frozen.

    Ingredients & Substitutions

    Eggs & Cream

    I used 6 large eggs in this recipe and ¼ cup of heavy whipping cream.

    Vegan Substitutes: if you wanted to make a vegan version or have an egg allergy, I have seen that there are a few egg substitutes (just egg is one of them) that should work fine in this recipe. Just be sure not to use an egg replacer that is just meant for baking because it won't work.

    The cream can be substituted with milk, soy milk, water, half & half or you can simply omit it and add an extra egg for volume.

    Seasonings

    I used a tiny bit of salt and that is it. You can use any kind of seasonings and spices that you like. If you wanted to make a Mexican inspired frittata, use some cumin, paprika, and a pinch of chipotle for spice.

    Nutmeg would be wonderful in a ham and swiss cheese frittata or in a seafood frittata.

    Anything goes! Use what you love and what will compliment the ingredients you are adding to your frittata.

    Extra Ingredients

    This is where it gets really fun. Open your fridge and see what you have leftover vegetable-wise and go from there.

    For example, if I had some leftover spinach, I would immediately think about a bacon, Swiss, and spinach frittata. Or a Shrimp and spinach frittata with a creamy melty cheese, like monterey jack.

    If I had ham, I'd go for ham and cheddar frittata, and if I had some stale biscuits, you bet I'd break those up in there and create a ham and cheddar biscuit frittata!

    Do you have pizza toppings left over? Use them and make a pizza frittata!

    You can use anything you have, have fun, and enjoy making your frittata. Just remember that volume is important when making a frittata, especially in the Ninja Foodi. See the section below for more information on that.

    Important Information When Substituting Ingredients to Make Your Frittata

    When you are making a frittata in the inner pot of the Ninja Foodi, volume is very important to consider.

    For example, if you skipped the stuffing and just added the 6 eggs and some cheese, your frittata would be more like an egg pancake and not really a frittata. So, for the best outcome you will want to make sure you have enough volume with all of your ingredients.

    You can do this a few ways. Add in more cooked meats and cooked vegetables, add more eggs, or a combination of both. When all of your ingredients are poured into the inner pot, you want them to reach the 3-4 cup mark on the pot for the cook time in this recipe. If they are lower than that, your cook time will decrease and your frittata will be thinner. If they are higher than that, your cook time will increase and your frittata will be thicker. Either is perfectly fine, just so you know to adjust things.

    You also want to make sure you are using cooked meat because there will not be enough cook time to properly cook any meat products, not even ground beef or sausage.

    The other consideration is that vegetables should be cooked except for quick cooking veggies like spinach. Keep in mind when adding things like spinach that cook very quickly, they also give off liquid as they cook and that can make your egg mixture runny.

    So, if you want to add a handful of fresh spinach that will be just fine, but adding in 4 cups might make your egg mixture runny and therefore not set up as nicely.

    Be patient and use medium low or even low heat. One of the most important things when making eggs is temperature control. Cooking eggs at too high of a heat results in a rubbery egg that oftentimes browns or develops a "skin."

    I found that on the Ninja Foodi using the ceramic coated pot, medium low worked great. If you are using the stainless steel pot, then you might want to decrease to low to avoid browning the eggs before they set up.

    Different Frittata Flavor Combinations

    Here are some examples of a few different Frittatas you can make in the Ninja Foodi.

    Seafood Frittata

    If you have leftover shrimp, scallops, or lobster, making a seafood frittata is a great way to use them up. You can even use raw seafood in your frittatas because they cook so quickly, but I would cut them into bite size pieces to make sure they cook in the time it takes to make a frittata.

    When I think of a seafood frittata, I immediately think of an alfredo style sauce with a pinch of nutmeg. To turn that flavor combination into a frittata, I would increase the cream to ½ cup, increase the eggs to 8, add about ¼-½ teaspoon of nutmeg and a few ounces of grated parmesan cheese and 2-3 cups of bite size seafood chunks.

    Southwest Frittata

    Was it taco night last night? Turn those leftovers into a delicious frittata! Use about 1 cup of leftover taco meat, ½ cup of diced onions (cooked or raw), ¼ cup green pepper chopped (cooked or raw), 8 eggs with about ¼ cup of salsa and ½ cup of shredded cheese.

    Make the Frittata and then top it with cold shredded lettuce, raw onions, more salsa, sour cream, and green onions. Cilantro would be great! Sliced avocado, too!

    Leftover Sub Frittata

    This one might sound strange, but if I can make a delicious frittata out of cornbread and sausage stuffing, you can make on with your leftover sub! Any kind should work just fine. Italian, Meatball, Steak & Cheese all sound great to me!

    Simply cut up your sub (take off the lettuce unless you like warm lettuce) into small pieces. You will want about 3 cups. Spread that over the bottom of the pot. Add in the same egg mixture I used and follow the same instructions.

    Pancake Frittata

    What a great way to use up leftover pancakes! Simply cut them into bite size pieces (about 3 cups worth), mix up the egg mixture and add a little syrup. Pour it over the pancakes and cook according the recipe instructions. I wouldn't add cheese to a pancake frittata, but I sure would add the cooked bacon or cooked sausage in the mix or on top!

    These are just a few of the combinations that came to mind that you might not normally think of. Simply look in your fridge to get ideas on what to put in your frittata!

    How to Make a Leftover Stuffing Frittata in the Ninja Foodi

    Measure out about 3 cups of your leftover stuffing. Whisk 6 eggs with ¼ cup of heavy cream (half and half or milk is fine), season with ½ teaspoon of fine grind sea salt.

    Add 2 Tablespoons of salted butter to the inner pot of the Ninja Foodi. Turn sear/sauté on low medium and hit start. When the butter has melted, dump in the stuffing and spread it out on the bottom of the pot.

    Pour the egg mixture over the stuffing.

    Let it cook on low medium sear/sauté for about 3-5 minutes or until the edges start to set.

    Check the edges by using a spatula (I love using my Pampered Chef Nylon Turner.) that is safe for the nonstick pot, gently pulling the edges back and when liquid egg isn't filling in the bottom, you are good to go.

    Grate some cheese over the top if desired. Close the crisping lid and switch to bake/roast. Set the temp to 350℉/175℃ and bake for about 10 minutes.

    To tell if it's done, press down on the top and make sure you don't see any raw egg coming up to the surface.

    Cut into wedges and top with extra green onions if desired. Serve & Enjoy!

    Equipment

    • Ninja Foodi Pressure Cooker with TenderCrisp
    Turn this on when cooking to prevent your screen from going dark

    Ingredients
     

    • 2 Tbsp butter salted or unsalted is fine
    • 3 cups cornbread & sausage stuffing or any stuffing you have
    • 6 large eggs
    • ¼ cup heavy cream
    • ½ teaspoon fine grind sea salt
    • 1 Tablespoon chopped green onions optional
    • ¼ cup smoked cheddar or an cheese you like, grated

    Instructions
     

    • Add the butter to the inner pot and turn sear/sauté on low medium.
    • While the butter is melting, measure out the stuffing or your other ingredients. Whisk together the eggs, salt, cream. Add chopped green onions if desired.
    • When the butter has melted, spread the stuffing or whatever frittata ingredients you are using over the bottom of the inner pot. Pour over the egg mixture. Let cook for 3-5 minutes or until the edges start to set. *timing is based on the height of the ingredients being around the 3-4 cup mark, if your ingredients are less in depth, the cook time will decrease. If they are higher in depth, your cook time will increase.
    • When the edges are set, grate some cheese over the top if desired and close the crisping lid. Select bake/roast on 350°F/175°C and bake for 5-10 minutes or until you can't see any liquid egg when you press down on the top.
    • Serve & Enjoy!
